From Our Kitchen: Spaghetti Squash Bundt

Spaghetti squash is a winter vegetable rich in vitamins minerals, and antioxidants. This easy to prepare and savory meal is sure to become a family favorite.

Ingredients
  • Spaghetti squash
  • Favorite spices
  • 1 large onion
  • 1 clove fresh garlic
  • Spinach and/or kale
  • 1cupgrated pecorino romanocheese (about 2 ounces)
  • Ground chicken or turkey (optional)
  • 2cupsmarinara sauce

Cooking Instructions

Season spaghetti squash with favorite spices and a spritz of olive oil. Roast in oven at 425°F until tender. Fork out squash from skin and place in bowl. Add additional spices if needed. Sauté minced onions and fresh garlic and put to the side. Sauté greens either spinach or kale or a combination of both. Mix greens and onions together. Place half of spaghetti squash in a greased bundt pan. Next lace the greens and onions on top of squash. Sprinkle pecorino romanoor other fresh grated cheese of choice on top. *An optional layer could be sautéd ground chicken or turkey. Finish layer with remaining spaghetti squash. Bake bundt for at least 30 minutes at 350°F.Let rest at least 15 minutes out of the oven. Place large plate over bundt pan and invert. Slice and serve with marinara sauce on side and cheese of choice.
